I love the idea of growing pumpkin seeds (a moist paper towel and a ziplock bag will let you watch the roots begin to grow, or you can add soil to the inside of an actual pumpkin and see what happens) or making a salt pumpkin appear as if by magic (use a glue stick to create the outline, then let your kiddos add the salt)!
